Dave Mills

Dave Mills is one half of the Mills + Franks Directors, and resident expert in Operations, Finance, Hospitality and Business Performance.  

How many years have you worked in the hospitality industry?

Over 15 years working in the hospitality experience across all areas

What companies have you worked for?

Most of my professional life was in Melbourne where I worked with a variety of smaller operators, these included Movida, the Royal Saxon, The Office of Public Works who is known for their container bar Section 8, and owning my own Peruvian & Argentinian restaurant Piqueos. I also worked for larger groups, Conran Restaurants in London and Solotel in Sydney in much larger venues.

What are your career highlights?

My highlights about working in such a dynamic industry is the people you get to meet and learn from over the years from so many different walks of life. Accolades received over the years include Hat’s, awards for best venue’s and most recently Hotel of the year for NSW and then Australia. These accolades are directly linked to the amazing teams we work with day to day and the experiences they deliver. And currently working on our own business project - Mills + Franks !

What is your most unforgettable hospitality experience to date?

Opening my own Peruvian & Argentinian restaurant Piqueos in Melbourne. A passion project, a learning experience and opportunity that has truly shaped where I am today

What parts of your job are you most passionate about? 

Working with a team to deliver the most exceptional, authentic experience to see how happy you can make people's day and milestones.

Why do you do what you do?

I love everything to do with food, beverage and entire experiences that we deliver in our industry every day. The people connection is something that makes me appreciate what I do every day.
